This knife is wonderful in so many ways! I just received it and chopped a bunch of onions right away and it was great. What is great about it?
The blade shape, as you can see in the photos, is nearly flat for the first 7 inches from the handle. Everyone has different preferences, but it you ask me, it’s perfect: A knife that you can use like a chefs knife, but also like a nakiri, or vegetable knife. The handle is the best plastic handle I have ever tried. A little smoother and a little bit softer than a Victorinox, and very well molded. Not cheap feeling. Nice.
The balance is definitely towards the blade and this is exactly what I prefer. I have a Crimson G10 knife as well, and it has perfect balance. Both are fine, but I like the forward balance a lot. The distal taper is very nice…nice thin tip. Maybe that is what reviewer Erik above finds “flimsy”. Overall, it is not a flimsy blade.
I will add more words after more time with the knife, but I am VERY pleased with the design and performance so far and price. I NEED the Ergo Chef dropped handle design to be able to “rock chop” at all. Without it, I can only cut push style, which I love to do, but options are great. Getting a 10″ knife with a blade profile I really love, with the handle that saves my wrist, for cheap, is great.

I am a professional kitchen worker, I use a knife all day, this knife is kinda flimsy, and does not hold an edge well. I had a friend/colleague who had a pro series 8 inch and I loved it.

Sorry you are having issues with this knife holding an edge. First time we have heard this. It is not same steel as Pro Series or Pro 2.0 but should hold a decent edge. Please contact [email protected] send image of the knife and edge for evaluation. if its under 60 days old we will send you a new one.
